flattopgourmet.com is about cooking on a steel plate: Blackstone-style griddles, diner flattops, the wide hot surface in the backyard. Recipes, techniques, and the gear that actually changes the cook. Not a dump of product roundups.
The interesting part is heat. Maillard browning starts in earnest around 300°F. Water boils at 212°F. As long as food is wet or crowded, the plate spends its energy making steam instead of crust. That is why smash burgers work, why leftover rice fries, and why a melting dome is a tool you put on late, not a lid for the whole cook.
The recipes are written from a 36-inch Blackstone. Four burners, so the plate can be a smash zone and a bun zone at the same time. If yours is smaller, the ideas still hold. The batch sizes change.
